Chocolate Peanut Butter Cup Banana Bread

Yes, that’s right.  A rich, dense banana bread with an extra touch of peanut butter and chocolate peanut butter cup bits throughout.  This is a super-decadent banana bread – definitely more the dessert type than the breakfast type.

I was inspired by the Cookies & Cups blog posting for this bread that I found via Pinterest – I just adapted it using my existing favorite banana bread recipe.  I also used the peanut butter cups from Trader Joe’s – they are much better than the Reese’s kind because they are made with real peanut butter.  Plus, they have both a milk chocolate and a dark chocolate option (I used the milk).  Either way, this bread is ridiculously good!  I brought it to work and my office-mates loved me for it.

Total Time: 1 hour, 15 min.

Ingredients

  • 1/2 cup butter, melted
  • 1 cup white sugar
  • 2 eggs
  • 1 teaspoon vanilla extract
  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 cup peanut butter
  • 2 medium bananas, mashed
  • 8 oz. peanut butter cups, chopped

Directions

  1. Preheat oven to 350 degrees.  Grease a 9×5 inch loaf pan.
  2. In a large bowl, stir together the melted butter and sugar. Add the eggs and vanilla, mix well. 
  3. Combine the flour, baking soda and salt.  Stir into the butter mixture until smooth.
  4. Fold in the peanut butter, bananas, and peanut butter cups. Spread evenly into the pan.
  5. Bake for 60 minutes, or until a toothpick inserted into the center of the loaf comes out clean. Cool loaf in the pan for 10 minutes before removing to a wire rack to cool completely.
